Lotus Leaf and Winter Melon Soup with Old Duck
· Function (for reference only):
Clears heat, relieves summer heat, dispels dampness, benefits the stomach, and generates fluids
· Ingredients:
Old duck 250g, half a lotus leaf, winter melon 500g, salt to taste, ginger to taste. (Fresh lotus leaf can be used for a more fragrant taste, and the skin of the winter melon can be left on as it is also a medicinal herb.)
· Steps:
1. Soak the lotus leaf in clean water until soft; 2. Cut the winter melon into pieces, clean and cut the duck into pieces; 3. In a pot, add cold water, bring to a boil with duck pieces and ginger slices, then rinse and set aside; 4. In a clay pot, add an appropriate amount of water, put in the lotus leaf, duck meat, and ginger slices, and simmer for 1 hour; 5. Finally, add the winter melon, switch to medium-low heat, and simmer for another 0.5 hours, adding salt to taste before serving.

Bamboo Fungus and Old Duck Soup
· Function (for reference only):Relieves summer heat, benefits qi, nourishes yin, moistens the lungs, and clears heat· Ingredients:Half an old duck, 50g dried bamboo fungus, 5 slices of ginger, 2 liters of water, salt· Steps:
1. Soak the dried bamboo fungus in warm water for 20 minutes, wash clean (repeat several times), and cut into pieces about three inches long;
2. Clean the duck and cut it into pieces, soak for one hour;
3. Place the duck pieces in the soup pot, add enough water to cover the duck, bring to a boil, skim off the foam, add ginger slices, and simmer on low heat for 1 hour;
4. After 1 hour, open the lid, add salt, then add the bamboo fungus, cover, and continue to simmer for 20 minutes.

Summer Kuding Tea and Black Bean Soup
