Today marks the fifth day of the Frost’s Descent solar term, the last solar term of autumn, indicating that winter is approaching. During this season, my favorite thing is to hold a bowl of fragrant hot soup while eating, feeling the warmth spread throughout my body with each sip. What a blissful feeling! Therefore, we will often share with you nourishing soups suitable for the autumn and winter seasons, allowing everyone to enjoy delicious food while also regulating their bodies.
Today, we will introduce — Shan Yao Yi Mi Shou Rou Tang (Chinese Yam, Job’s Tears, and Lean Pork Soup).
We know that Shan Yao (Chinese Yam) has the effects of “benefiting kidney qi, strengthening the spleen and stomach, stopping diarrhea, resolving phlegm, and moisturizing the skin.” It is very effective for conditions such as spleen-stomach weakness, diarrhea, fatigue, poor appetite, and spontaneous sweating. Yi Mi (Job’s Tears) is also a commonly used Chinese herb, known for its sweet, bland, and slightly cold properties. It has effects such as promoting urination and reducing swelling, strengthening the spleen and eliminating dampness, relaxing the muscles and alleviating pain, and clearing heat and expelling pus. It is a commonly used diuretic and damp-resolving herb.
The other important ingredient in this soup is pork. Pork has a sweet and salty flavor, is neutral in nature, and enters the spleen, stomach, and kidney meridians. It has the effects of nourishing the kidney, enriching the blood, and moistening dryness. Pork soup can replenish body fluids and nourish yin. Therefore, this soup is particularly suitable for consumption during the dry autumn and winter seasons.
Now, let’s start making it:
First, prepare the ingredients: lean pork, Shan Yao (Chinese Yam), Yi Mi (Job’s Tears), jujubes, goji berries, ginger, and salt. Adjust the quantity of ingredients based on the number of people eating.
Wash the Yi Mi (Job’s Tears), jujubes, and goji berries, then soak them. Soak the Yi Mi (Job’s Tears) overnight, the jujubes for 2 hours, and the goji berries for just a short while.
Wash the pork and cut it into small pieces.
Wash the Shan Yao (Chinese Yam), peel it, and cut it into small pieces or slices.
Remove the pits from the soaked jujubes and set aside.
Blanch the pork to remove blood foam and odor. Place the pork in boiling water, skimming off the foam during the process, and remove it after blanching.
Put the blanched pork, soaked Yi Mi (Job’s Tears), jujubes, and ginger slices into a pot.
Add an appropriate amount of water.
Using a rice cooker, select the soup mode and set the time for 2 hours. If using a gas stove, bring to a boil over high heat, then reduce to low heat and simmer for 2 hours.
After an hour and a half, add the Shan Yao (Chinese Yam), goji berries, and an appropriate amount of salt.
Stir slightly to mix evenly, cover, and continue to simmer.
