Stir-fried Enoki Mushrooms with Broccoli
– Ingredients –
1 head of broccoli, 1 bunch of enoki mushrooms
Ginger, vegetarian oyster sauce
Soy sauce, starch
Sesame oil, and a little fragrant oil
– Steps –
1. Clean the broccoli, tear it into small florets, blanch briefly, then cool in cold water and drain;
2. Chop the ginger finely;
3. Trim the tough ends of the enoki mushrooms and wash them for later use;
4. In a small bowl, mix vegetarian oyster sauce, soy sauce, starch, and a spoonful of broth to make the sauce;
5. Heat oil in a pan, sauté the ginger until fragrant, then add the enoki mushrooms and stir-fry for 2 minutes;
6. Pour in the sauce, bring to a boil, and add the broccoli, stir well;
7. Finally, add sesame oil before serving.
Tomato, Enoki Mushroom, and Tofu Soup
– Ingredients –
1 tomato, 1 block of tofu
1 bunch of enoki mushrooms, a little peanut oil
A pinch of salt, a little soy sauce
– Steps –
1. Prepare the ingredients, wash the enoki mushrooms and tofu, and cut the tofu into cubes;
2. In a pot, add a little oil and sauté the tomato until soft;
3. Add a bowl of water;
4. Once the tomato soup turns red, add the tofu;
5. Then add the enoki mushrooms;
6. Cover and let it simmer;
7. A bowl of weight-loss tomato, enoki mushroom, and tofu soup is ready!
Nut and Spinach Salad
– Ingredients –
1 bunch of spinach, a little vegetable powder
A suitable amount of peanuts, about 8 Sichuan peppercorns
A small spoon of vinegar, light soy sauce, olive oil
– Steps –
1. Clean the spinach;
2. Boil water in a pot, add the spinach for about a minute, then remove;
3. Fry the peanuts in cold oil over low heat until cooked;
4. Rinse the blanched spinach in cold water, set aside the fried peanuts;
5. Drain the spinach, cut it into about 5 cm lengths, place in a large bowl, add olive oil, peanuts, salt, vegetable powder, vinegar, and light soy sauce, and mix well.
Stir-fried Lily with Asparagus
– Ingredients –
1 small bunch of asparagus, 2 fresh lilies
3-5 goji berries, 1 small spoon of starch
Vegetable oil, salt to taste
– Steps –
1. Boil water, add appropriate salt and a few drops of oil;
2. Blanch the asparagus and lilies, remove when the asparagus changes color;
3. Rinse the blanched asparagus and lilies in cold water;
4. Heat a pan with a little oil, add the blanched asparagus and lilies, and stir-fry;
5. After a few stirs, add salt to taste;
6. Add a little water starch to thicken, serve on a plate, and top with soaked goji berries.
Tofu with Chinese Toon
– Ingredients –
1 block of tofu, 200g of Chinese toon
Salt to taste, vegetable powder to taste
A little sesame oil
– Steps –
1. One block of northern tofu, wash the Chinese toon sprouts;
2. Cut the tofu into pieces and blanch, do not cool in cold water, blanch the Chinese toon in boiling water until it changes color and chop finely;
3. In a mixing bowl, combine tofu, Chinese toon, salt, vegetable powder, and sesame oil, mix well and serve!
Stir-fried King Oyster Mushrooms with Green Peppers
– Ingredients –
3 king oyster mushrooms, 1 green pepper
A little black fungus, salt
Vegetarian oyster sauce, light soy sauce, water starch
– Steps –
1. Wash the green pepper and king oyster mushrooms;
2. Soak the dried black fungus in water, slice the king oyster mushrooms;
3. Remove the seeds from the green pepper and cut into pieces;
4. Boil water in a pot, add a little salt, blanch the black fungus and king oyster mushrooms separately;
5. Heat the pan, add a little oil, then add the blanched black fungus and king oyster mushrooms, add salt and vegetarian oyster sauce;
6. Add the green pepper pieces and stir-fry. Thicken with water starch. Serve.
Millet, Red Date, and Goji Berry Porridge
– Ingredients –
50g millet, 10g red dates
10g goji berries, 10g rock sugar
– Steps –
1. Rinse the millet and red dates, place them in a pot with water;
2. Boil on high heat, then reduce to low heat and cook for 10 minutes, add goji berries and cook for another 10 minutes;
3. Add rock sugar 2 minutes before serving.
Artemisia and Potato Brown Rice Balls
– Ingredients –
100g artemisia, 100g potato
150g brown rice, 5g roasted sesame
1/2 sheet of sushi nori
About 1/2 teaspoon of salt
1 teaspoon of sesame oil
– Steps –
1. Clean the artemisia, blanch, squeeze out excess water, and chop finely, mix with salt and sesame oil;
2. Steam or microwave the potato until cooked, then chop finely;
3. Mix the brown rice with potato, chopped artemisia, and roasted sesame, then shape into rice balls;
4. Wrap the rice balls with nori for decoration.
Black Pepper Spinach Rice Balls
– Ingredients –
1 bunch of spinach, a suitable amount of peanuts
About 8 Sichuan peppercorns, a small spoon of vinegar
Light soy sauce, cooking oil, a little vegetable powder
– Steps –
1. Prepare the rice balls after steaming the rice;
2. Chop the spinach, blanch in boiling water for about 10 seconds, then cool in cold water;
3. Mix the blanched spinach with black pepper sauce;
4. In a bowl, add the steamed rice, a few drops of vinegar and mirin, grind in black pepper, sprinkle with cooked black and white sesame, and mix well;
5. Wet your hands with water, shape the rice into balls, and decorate the top with some black sesame.
