The concept of medicinal cuisine can be traced back to the Spring and Autumn and Warring States periods. In the “Huangdi Neijing” (Yellow Emperor’s Inner Canon), there is a recipe for Banxia Shumi Soup, which uses Banxia (Pinellia ternata) and Shumi (a type of millet) to treat insomnia, stating that it is effective for “newly developed illnesses, sleep is restored when the cup is covered, and sweating ceases” and “effective for chronic insomnia.” The “Jinkui Yaolue” (Synopsis of Prescriptions of the Golden Chamber) mentions the recipe for Danggui Yangrou Tang (Angelica and Lamb Soup), which treats postpartum blood deficiency and abdominal pain in women.
Today, while medicinal cuisine still focuses on the integration of food and medicine, it places greater emphasis on the fusion of medicine, culture, and art. Below, we introduce three dishes that allow you to appreciate the beauty of TCM medicinal cuisine…
1. Yam and Purple Sweet Potato Cake
The Yam and Purple Sweet Potato Cake resembles the shy beauty of a maiden’s face. In the recipe, yam, known as Shuyu in ancient times, can replenish the deficiency of the spleen, lungs, and kidneys, treating symptoms of weakness and emaciation; prolonged consumption enhances hearing and vision, promotes longevity. Purple sweet potato, known as Shanyu or Fanshu in ancient texts, is said to be “edible raw like kudzu, cooked like honey, with a taste similar to water chestnuts.” The “Bencao Gangmu” (Compendium of Materia Medica) states that it can “nourish deficiency, strengthen the spleen and appetite, enhance kidney yin, and promote longevity.” Its dietary fiber aids in bowel movement, while its content of dehydroepiandrosterone can prevent breast and colorectal cancer, and its vitamin A effectively prevents night blindness. The juice from its leaves, when applied externally, can treat shingles. The combination of yam and purple sweet potato cake is effective for diarrhea, leukorrhea, diabetes, and nocturnal emissions.
Preparation:
1. Prepare a large amount of yam, a small amount of purple sweet potato, and steam the sweet potatoes until soft, dividing them into three portions: one pure yam, one yam mixed with purple sweet potato, and one yam mixed with red sweet potato.
2. Add an appropriate amount of condensed milk to each portion, mash them into a paste, resulting in three colors: white, purple, and orange. Roll them into small balls weighing 20 grams each and prepare some bananas and coconut flakes.
3. Take one white and one purple yam ball, press the center to form petals, place an orange yam ball in the center as the filling, add a small amount of banana as the stamen, roll it into a ball, coat it with a little coconut flakes, and use a mold to shape it into a beautiful flower.
“Shy Beauty”
Yam and sweet potato as petals, banana as the stamen,
Clear and crisp like snowflakes on coconut cream;
Let the orchids bloom in the spring breeze,
Do not compete with the world for madness.
You hang the remaining goodness to replenish deficiency,
I wear purple to soothe the fire elixir;
Especially holding the pipa to shield my eyes;
Diarrhea, leukorrhea, and thirst are the golden prescriptions.
2. Dried Tangerine Peel Tea Jelly
Dried tangerine peel tea jelly has the effects of moistening and generating fluids, resolving dampness and heat, aiding digestion, and sobering up. In the recipe, dried tangerine peel has a slightly bitter and spicy taste, entering the lung and spleen meridians; it has the effect of regulating qi and resolving phlegm. White tea is slightly cold, while black tea is slightly warm; jasmine flowers are warm in nature, with a spicy and sweet taste, capable of promoting qi and relieving depression, warming the middle and harmonizing the stomach; osmanthus flowers are warm and spicy, effective in generating fluids, awakening the mind, and resolving phlegm.
Preparation:
1. One piece of yellow rock sugar, one packet of ice powder, 4g of dried tangerine peel, and 5g of white tea (or 5g of black tea). First, rinse the dried tangerine peel and white tea with hot water, then brew the tangerine peel and white tea, extract the juice, and mix it with the ice powder. Use the same method to make dried tangerine peel black tea jelly.
2. Place a small amount of osmanthus flowers on the black tea jelly and a small amount of jasmine flowers on the white tea jelly, refrigerate in the fridge for 30 minutes before serving.
“Immortal Jelly”
Red and translucent like fire, smooth as jade,
Bright and clear like the moon, pure and cool;
A touch of white from the lily tree,
A few strands of osmanthus fragrance;
Cooling and resolving dampness, the immortal jelly,

3. Ginger Milk Pudding
In the recipe, fresh ginger is warm in nature, with the effects of inducing sweating and relieving the exterior, warming the middle and stopping cough; milk is neutral, entering the heart, lungs, and stomach meridians, nourishing yin, replenishing blood, filling essence, and strengthening bones. Ginger milk pudding is smooth and tender, warming and protective, harmonizing yin and yang, and lingering in the mouth~
Preparation:
1. Prepare 25ml of ginger juice and 250ml of whole milk in a ratio of 1:10, along with 25g of sugar.
2. Pour the milk into a saucepan, add sugar, and heat over low heat until the milk reaches a temperature of about 65-70 degrees Celsius, with small bubbles forming at the edges of the pot.
3. Pour the hot milk into a bowl containing ginger juice, and let it sit undisturbed for 10-15 minutes until it solidifies.
Tip: Ginger juice contains ginger protease, while milk contains various caseins and calcium ions. When ginger juice meets milk, ginger protease hydrolyzes the k-casein in milk, and with the participation of calcium ions, the casein micelles aggregate to form a gel, thus causing the milk to solidify.
